Consistency:

generally liquid, with very slow crystallisation

Colour:

light. The colour ought to be almost crystal clear

Aroma:

delicate, refined and pleasant. Reminiscent of flowers, almonds and vanilla pods

Taste:

subtle, delicate and mellow, described as “candied” by tasters. It is sweet and silky, making it simply irresistible. The aftertaste adds a fresh note of sweet almond

Production area and period:

During flowering, which lasts approximately 10 days, bees repeatedly visit the nectar-rich calyces, working tirelessly from morning till night. This honey is collected in springtime in acacia woods, especially in the Prealps, but is found all over Italy: Piedmont, Lombardy, Veneto, Friuli Venezia Giulia, Tuscany, Emilia-Romagna, Abruzzo and Campania regions

Tips for use:

As this is a liquid honey, it dissolves easily, making it perfect for sweetening tea, coffee and other drinks without altering their flavour. It is ideal for making fruit in syrup or candied fruit, but also goes well with vegetables. It can be used in sweet and bread mixes and for making mixed fruit salads. It is perfect with fresh cheeses, but also with mature ricotta and blue cheeses that are only lightly matured.
